My sim got stuck, so I deleted her. When she appeared at the mailbox again, she was demoted and pregnant again (as if from the last save). She won't stop being pregnant, and she's using vacation days. What should I do?

This is what happens when you delete Sims in the game. They revert back to their state at the last save.

Well if your sim doesn't behave itself, he/she/it may be faulty and need bumping off.

She's not faulty, she's just permanently pregnant and using vacation days (which are running out)

She'll eventually be fired won't she? And if you don't want your sime to get pregnant don't select "try for baby". :) Just select "woo hoo" its like a condom. LOL
